The particularity of the plateau is the exposition to hot and dry daytime temperatures with high altitude cool nights, all within a short distance from the sea and regular maritime winds. The plateau has been continuously used for vine and olive growing for centuries, and was once the site of a major olive pressing operation that supplied a large part of France with its olive oil. In 1945, when the owner of the olive oil mill packed up and moved his operation to colonial Algeria is search of bigger land and greater profits, Roger Maestracci saw a golden opportunity and moved in. The departing olive oil baron had left behind a massive concrete structure with walls so thick the air inside stayed cool year round. Originally used to house the mill and the pressed oil, Roger adapted the structure for old wooden casks and concrete tanks and set about replanting vines on the property. Within a few years the domaine had established a firm reputation in the area and when it came time for Roger to retire in the early 1980’s he passed along the reigns of the domaine to his son-in-law, Michel Raoust, who still runs the domaine today. Given the particularity of the terroir and the diverse influence of the temperature variations and granite soils, Michel allows the red an extended time to age and mellow before release, at least two years in large oak casks, while the white is bottled young to maintain the freshness and iodized ocean breeze of the terroir. When the legendary founder of Château Rayas died suddenly in 1997, his wife asked their nephew, Emmanuel Reynaud, to take the reins at both Château Rayas and Château Fonsalette. Already making wines at his father’s Château des Tours, Emmanuel agreed.

He is somewhat reclusive, and can be found working his vineyards at most any time of day, every day. Emmanuel does not revel in the fame and notoriety that come with making such sought-after and acclaimed wines, but he continues to carry the mantle of his famous forebears, producing hauntingly aromatic wines at his three estates: Château Rayas, Château des Tours and Château de Fonsalette.

Château Rayas was purchased by Emmanuel’s grandfather, Albert Reynaud, in 1880; it was made famous by Jacques and his father, Louis, a pioneer in the appellation. Even today, visiting Rayas is like taking a trip back in time; the estate did not even have electricity until the late 1980s. Emmanuel continues in the traditional style, while moving forward as the heralded winemaker of one of the world’s most sought-after wines. Here, in addition to creating the wines of Château Rayas, Emmanuel also produces Pignan, expressing a different approach to this unique terrior.

Composed of three separate vineyards — Le Couchant, Le Levant and Le Coeur — Château Rayas occupies one of the most unique sites in the world. The estate is surrounded by towering pine trees (pignan in French) that monitor the airflow into the vineyards, and the vines are planted in very fine sand that regulates their temperature and maintains humidity around the roots. This seemingly magical sand creates its very own microclimate — and exceptionally elegant wines.

While 13 varietals are permitted in Châteauneuf-du-Pape, Emmanuel uses only one for Rayas’ red wines: Grenache. For the whites, he uses Grenache Blanc and Clairette. Grapes come from the three vineyards, are vinified and aged separately in old barrels, then are blended to achieve Emmanuel’s vision for the vintage, always adhering to Château Rayas’ signature style. With a Pinot Noir–like flavor profile — kirsch, cherry, peat moss — coupled with a peppery Mediterranean flair that is distinctively “Southern France,” there is simply nothing like a bottle of Château Rayas.

//cdn.shopify.com/s/files/1/0044/2492/5255/products/image_07e65dca-5571-47e9-b82a-a6af88f84c97.jpg?v=1648593514
domaine-gallety-cotes-du-vivarais-blanc-2017
Domaine Gallety Côtes du Vivarais Blanc 2022
Vines 40 years old average. His name may not go back 100 years in the village, but he did learn to make wine from local legend Robert Michel (who saved Thierry's life once when he fell into a cask of wine…for real!). Allemand makes only single-vineyard Cornas: Reynard and Chaillot. They are two of the world’s greatest wines. (They are not strictly single-vineyard wines, as sometimes Allemand will put his oldest vine Chaillot in the Reynard, and both wines might borrow a bit from other sites; it varies vintage to vintage.) Over six generations this family, which owns the Domaine Santa Duc, has forged close relationships and friendships with winegrowers who had the same approach to working the vines but, at some point or another, no longer wished to bottle their own wines. These experts in southern Rhone Valley terroirs fashioned the Famille Gras range with the same rigorous standards and the same skills, stamping it with their identity. RESPECT is the watchword guiding every decision. These southern Rhone wines are authentic and rich in flavour, combining the family’s characteristic touch of finesse with the power that we expect from this region. Their origins are diverse – Rasteau, Côtes-du-Rhône and IGP Vaucluse – and the terroirs and the parcels are all different, but the philosophy remains the same: an emphasis on organic farming, winemaking methods that are as natural as possible and selections from the coolest terroirs of the region. Thus the pleasure last longer for all, and the Gras family is able to continue making wines that the previous generations liked to drink, in the shade of a leafy pergola.

//cdn.shopify.com/s/files/1/0044/2492/5255/products/image_ce3c1c96-39e0-4a64-9e82-58edaa9af744.jpg?v=1670542477
bernard-burgaud-cote-rotie-2018
Bernard Burgaud Côte-Rôtie 2018

Black fruit (boysenberry, blackberry), coupled with savory herbs & olives.
