Domaine Henri Boillot represents the success that is born of hard work and determination. The Domaine, led by Henri Boillot himself, encompasses fifteen hectares of some of Burgundy’s top terroirs* in Puligny-Montrachet (including the famous 1er Cru monopole Clos de la Mouchère), Meursault, Beaune, Pommard, Volnay, Grand Cru Batard-Montrachet and Clos Vougeot. Henri’s intimate understanding of Burgundy coupled with his dedicated approach gives birth to highly sophisticated wines with global appeal.
The vineyards are grown organically, without the use of any chemicals and the vines are grown to produce low yields of high quality grapes. It sounds easy but the work involved and the number of hours spent in the vineyards is exhaustive. The aim is for the grapes to achieve peak ripeness and this happens better with low yields for both Chardonnay and Pinot Noir.
At the winery, there are strictly no chemicals used either during production or added to the wines apart from natural sulphur which protects the wine against oxidation. Their goal is to preserve the original taste as testimony to the complexity of the soils. The grapes are then meticulously sorted to retain only the best. Finally, the white wines mature in 350 litre French oak barrels for eighteen months while the reds are matured in barriques (228 litre oak barrels) for the same period.
Henri Boillot is at the epicenter of great winemaking and is one of the most respected winemakers in Burgundy. Under his craftsmanship and exceptionally skilled hands, his Chardonnay and Pinot Noirs are without a doubt top-tier Burgundies.
Boillot is hands-on. He practices strict grape sorting and selection. The alcoholic fermentation takes place in wood vats. The wine is aged for 10 months in a judicious amount of new and 1-2-year-old oak barriques. This treatment is very rare for Bourgogne Blanc, but this is Henri Boillot’s dedication to making the best of everything he bottles.
There is a subtle touch of minerality to the detailed and discreetly saline-inflected flavors that possess the fine depth and length. Recommended as this definitely boxes above its weight.
Fresh aromas include those of red and dark berries, earth and a whiff of the sauvage. The delicious middle weight flavors are at once sleek and juicy with a clean mouthfeel that continues onto the youthfully austere and moderately firm finale. This is a very fine Bourgogne and worth checking out.
Based in Meursault, Domaine Henri Boillot is strategically placed between Puligny-Montrachet and Volnay, the two appellations that have become its specialty. The domain has set itself a firm objective: to express, through its wines, the essence of the vines and their distinctive climates.
A wine with an incredible purity of citrus fruit and just a hint of reduction, plus a buttery note and a creamy texture that come out on the palate. Marvellous. This textbook Meursault is produced from domaine-owned parcels such as the Clos du Cromin, En la Barre and Casse Têtes, as well as fruit purchased from Narvaux, Tillets, Limosin, Chevalières and Petits Charrons. The grapes are lightly crushed and pressed in a state-of-the-art vertical press with the cage sealed.
