Fidora Winery has practiced organic viticulture since Guido Fidora began eschewing the use of chemical fertilizers on the family estate in 1974. That makes Fidora the oldest organic producer in the Veneto region, and one of the most established in Italy. Their Domini del Leone prosecco presents fresh, crisp pear and apple flavors with a very dry finish. Certified organic, vegan.
The Cabernet Sauvignon is hand-picked at about 10° alcohol. The free run juice (saignée) is sent to an airtight stainless steel tank where it ferments on it own with nothing added to it -- no dosage, no liquor, no gas, no sugar, no yeast. This single fermentation is referred to as Method Charmat. While similar to Petillant Natural, the difference is that the fermentation does not take place in bottle.
100% Chardonnay, sourced from vines over 25 years of age in a vineyard planted on limestone and clay soils in the town of Tonnerre (10 miles from Chablis, but no longer Chablis appellation). All the grapes are hand-harvested, and it is fermented and aged in stainless steel tanks before undergoing secondary fermentation. It then spends 9 months on the lees before it is disgorged and no dosage is added.
70% Chardonnay, 27% Pinot Noir and 3% Ambonnay still red wine. A delicate rose-petal hue, an ideal aromatic purity and tonic fruitiness, with just the slightest hint of dosage so as not to mask the minerality of the Bisseuil and le Mesnil terroirs.
The Brut NV is 100% Pinot Meunier harvested from six different parcels. After a slow and gentle pressing in a traditional Coquard vertical press, the juice is fermented in stainless steel tanks. It undergoes a malo-lactic fermentation and then rests “sur lattes” for a minimum of 18 months.
