Vincent Ricard runs one of the most esteemed cellars in the whole of Touraine. His vines are old, he farms organically, and his wines drink well above their respective price points. His entry-level white is 100% Sauvignon Blanc fermented in tank, then aged on lees for a bit. Vincent ages about 20% of the juice in well-seasoned, old barrels to add texture. The resulting wine is reminiscent of Sancerre, with lovely notes of lemon, grapefruit, green herbs and mineral.
