Eleni and Edouard's holdings in the premier cru Butteaux are 0.32 hectare. The soil is Kimmeridgian (superieur), pre-dominantly argilo-calcaire. The vines are 60 years old and all selection massale.
Edouard and Eleni met while working the 2010 harvest in New Zealand. Soon after they were married and on their way back to Chablis to take over a small piece of Edouard's family domaine. Edouard's family owns Domaine Vocoret & Fils, a large and established domaine, with over 50 hectares planted.
Their primary focus with their first 4.9 hectares was applying a more artisanal and sustainable approach to farming. They specialize in making single site “village level” wines — highlighting a single plot with different personalities with same winemaking. Their small holdings allow them to know their vineyards by heart.
