Musician turned winemaker Julien Cruchandeau has been farming Chardonnay and Pinot Noir in the Hautes-Côtes de Nuits and NSG since 2010, producing small-batch wines in a hands-off style. ‘Les Cabottes’ is just as fun and crowd-pleasing as its maker, showing flavors of crunchy red fruit, mushrooms, and wet earth, marked by silky, well-integrated tannins. Serve slightly chilled with red meats, risotto, or game.

A one-hectare vineyard site. Hillsides with steep slopes (30%). East and west exposure, 400m above sea level.

HARVEST & VINIFICATION
Fermented for about 20 days in stainless steel vats with native yeast. Aged for eight months, 90% tanks and 10% in new barrels from the forest at Bouzeron (Forêt de Fontaine), then blended.
