From a one-hectare parcel of 50-year-old vines within the lieu-dit Chapelot, Moreau-Naudet's Montée de Tonnerre is consistently their most mineral-driven wine. The soils are sandy with rocky topsoil and rich in Kimmeridgian limestone.
When Stéphane joined his father and later took control of the family domaine in 1999, he flipped everything on its head. Today, he is practicing organic farming with biodynamic principles, natural yeast ferments, and hand-harvesting. Stephane passed away suddenly in 2016 and his wife Virginie has since taken over the domaine's management. She continues to grow and vinify her wines according to the same principles and the results are no less enchanting. ‘Vaillons’ is sourced from a 3ha parcel and aged 30% in old oak.
