Georges Laval is a tiny, artisan estate located in the 1er Cru village of Cumières, close to Ambonnay and Bouzy but with full southern exposure. Vincent Laval makes a miniscule amount of extremely terroir-driven wine. The estate has been organic since 1971. Fermentation takes place in barrel with indigenous yeasts; there is no fining, filtration or cold-stabilization, and minimal use of sulfur.
The golden-colored wine has aromas of delicate wildflower honey and fresh cut grass. It is mineral-driven and resonant on the palate, and very chalky on the finish.
One of our very favorite Champagnes for its balance, both rich and raw, elegant and very handcrafted.
