Since the 2019 vintage, a dash of Petit Meslier has been added to a predominantly Pinot-Chard blend. The rare, ancestral white variety is like a secret weapon; in one hand, remarkably resilient in the heat and drought, and in the other, providing a piercing, exotic lift that subtly defines the wine’s aromatic profile and focus.
Vinifications were the same in 2020: hand-harvested and rigorously sorted before a native fermentation in barrels and 48 months on the lees before disgorgement (of which there was one).
