The 2021 Pazo da Sinsela was produced with the grapes from the different plots in the property, fermented with indigenous yeasts in 225-, 300- and 500-liter oak barrels, where the wine matured for 12 months. The wines have austerity, and this has 12.7% alcohol and notable acidity and freshness, more about the soil and the granite, representing the Salnés with notable saltiness with high minerality. 4,000 bottles were produced. It was bottled in September 2022.
Pazo da Sinsela is another example of how this continually up-and-coming region, Riax Baixas, and its noble indigenous variety, Albarino, can make world-class, age-worthy white wines that can hold their own with the greatest white wines of the world!
