Old-style Chablis from the North. Florence and her husband François are 8th generation farmers with eighten hectares in Villy.
Most of their vines are betwen 60-80-year-old including a tiny slice of the Chablis Premier Cru “Les Fourneaux”, the only Premier Cru to face due South.
Harvested on September 21st, 2021, and after a traditional vinification, the wine ages on its fine lees for 8 to 9 months in stainless steel vats, before resting in oak barrels for another 6 to 8 months. The wine is then filtered and bottled on the estate.
