Louis Billard's Vosne Romanée is fermented in concrete; 20 days' maceration before being transferred into 228L Remond & ex-DRC Francois Freres barrels, medium-heavy toast, ranging between 0-3 uses. Racked once by gravity, and very gently filtered with light sulfuring at bottling.
Louis Billard began locally with a stint at Domaine de la Romanée-Conti for two years between 2018 and 2019, and time spent at Georges Roumier during the harvest of 2020. Louis’ determination to learn and grow stretched beyond the Côte d’Or, leading him to South Africa at Newton Johnson Estate. Next, Louis landed in Australia working alongside Nick Farr at the globally recognized By Farr Estate. He felt that his understanding of the DNA of his native varieties had grown in a robust way and that he was ready to head back home.
Armed with a new appreciation of the effect of terroir on Pinot Noir and Chardonnay, Louis launched his own project. With a sharp focus on purity in his winemaking he is exploring both the terroir of the Côte de Beaune and the Côte de Nuits. He farms and manages a handful of celebrated appellations from bud break through harvest from Saint-Aubin up through Vosne-Romanée, all complimenting his precise winemaking style well
