Cataldina and Vincent now work the 6.5 hectares of vines, 13 appellations of the Domaine, with love and commitment. Their philosophy is to respect family traditions whilst using new, modern, environmentally-friendly techniques in order to continue to improve quality. Clay and limestone
Les Longbois is in the commune of Volnay, situated in the lower part of the village.
Grapes are hand-harvested and carefully sorted. 100% destemmed, fermented in wood vats for 12 to 20 days with daily pump over and punch down. The wine is then aged in French 228L oak barrels (Tronçais), 10% new for 18 months average, depends on the vintage.
