Stefano Zoli is a winemaker in Matelica in the Marche, working the high-altitude inland zone that produces Verdicchio at its most mineral and structured. The IGT Bianco is made from 100% Verdicchio di Matelica from the Pagliano vineyard — a 13-year-old plot that reveals a different facet of the Matelica terroir. Fifty percent of the grapes undergo skin maceration for seven to ten days; the rest is pressed directly. Spontaneous fermentation, partial malolactic, four to five months in concrete with oxygen exposure. Saline, textural, and aromatic — a wine that showcases the incredible versatility of Verdicchio beyond the classic varietal bottling.
