WHAT HAPPENS AS WINE AGES? |
|
Most of the wines consume in the U.S are wines bought the day of.
Wine tastes better with age because of a complex chemical reaction occurring among sugars, acids and substances known as phenolic compounds. In time, this chemical reaction can affect the taste of wine in a way that gives it a pleasing flavor.
Not only the color changes but also the mouthfeel, wine becomes more like an experience.
WE KNOW, we live in a world of instant gratification and you may not want to wait a good 5 years until the wine is ready. No need to worry we got you cover.

Established in 2002 by winegrower and proprietor Eric Sussman, Radio-Coteau works closely with select cool-climate coastal vineyard sites in Western Sonoma County and Anderson Valley to produce wines with vibrant, balanced fruit and a distinct sense of place. Focus is on detailed and sustainable viticulture in conjunction with a natural, non-interventionist approach in the cellar to more accurately reflect the unique character of each site and season. The winery is situated in Sebastopol, and the estate vineyard is located in the hills above Occidental. |

Volker Eisele Family Estate is situated in the Chiles Valley District, one of fifteen grape growing appellations within the Napa Valley Viticultural Area.
Cloaked in frequent Pacific fog, Chiles Valley is one of the cooler areas of the Napa Valley resulting in a long growing season. The valley's perfect cabernet climate enhances the development of wines with subtle flavors, full body, and overall complexity.
The four hundred acre estate was originally part of the "Rancho Catacula" land grant, given to Joseph Bollinger Chiles in 1843 by the last Mexican governor of California. The Chiles family later sold a portion of their land to Francis Sievers, a German pioneer. In the 1870's, Sievers founded Lomita's Vineyard and Winery on the site. The original winery building, some of the tanks, and the original press constructed by Sievers still remain on the Estate. The oldest cabernet vines were planted by the Eiseles in 1975 and continue to yield fruit of superb quality.

Anyone who appreciates the feral, visceral nature of Pradeaux will revel in the “X”—a wine that, despite spending ten years in foudre, still feels youthful and vigorous, just beginning its doubtlessly near-immortal life. The aforementioned wild nose is both eager and brooding, a maelstrom of violets, unlit cigar, dried figs, and plums, all framed by an intense iron element. Super-concentrated on the palate (as befitting the quality of the vintage), its chewy tannins are just beginning to show mercy, and one can sense a secondary savory streak beginning to shine through the thick wall of fruit and spice. |

Deep red in the glass, this sultry wine shows dark berry fruit on the nose followed by black current, plum, with an undertone of lavender and allspice. Rich and velvety on the palate, this Cabernet Sauvignon exhibits full and smooth tannins, yet maintains a youthfulness. Plum and pluot re-emerge on the palate carried by undertones of rhubarb and hints of nutmeg. Great aging potential. |

Les Champeaux is a 6.88 ha vineyard at the northernmost limit of Gevrey-Chambertin, just south of Evocelles (a Gevrey village vineyard located in Brochon, that many think should be a premier cru.)
Though Les Goulots and Combe aux Moines are yet above it, Les Champeaux is perched high on the slope, at 310 to 350-meters elevation. It faces east to southeast.
Because Champeaux is a patchwork of small parcels, some of which are terraces, the vineyard’s slope varies from gentle to steep.

Château Haut-Marbuzet is one of the oldest properties in Saint Estèphe. The vineyard is perfectly located, on gravelly slopes mixed with clay and limestone. The high proportion of Merlot (40%) in the blend gives it an exceptionally soft, mellow character, resulting in Robert Parker describing it as the most sensual wine in Bordeaux.
The talent, disarming kindness and warm welcome that is always extended by the Duboscq family, has over many years built a very solid fan base for their supple, rounded wines with well-integrated tannins and intense aromas.
