Pale straw in color. The Nose possesses fresh, yeasty, crusty-bread qualities with hints of salty almonds. The palate is clean and tangy with a refreshing finish and a softness which makes it delightfully easy to drink.
This dry Fino (called a "Sherry-style" wine because it's from Montilla-Moriles rather than Jerez) was great as an accompaniment to a mound of fresh shrimp that had been sautéed with lots of garlic, high-quality Sicilian olive oil, pepper, salt, and a pinch of red pepper flakes. The wine's yeasty, savory notes fit perfectly with the dish. It's challenging to explain why this pairing works... but it does.
