100% Chardonnay from 27-year-old vines, planted on two distinct parcels: Bel-air, with stony brown clay soils, and Clardy, with white marls over hard limestone. The estate is certified organic and biodynamic. The grapes are harvested by hand when very ripe, followed by long fermentation in barrels on fine lees, without stirring. Half of the wine is matured in 500-litre Stockinger barrels of less than 5 years old, with the other half in 10-to-12-year-old 225-litre barrels. Just a micro dose of sulphur at bottling.
