Old-style Chablis from the North. Florence and her husband François are 8th generation farmers with eighten hectares in Villy. Most of their vines are betwen 60-80-year-old including a tiny slice of the Chablis Premier Cru “Les Fourneaux”, the only Premier Cru to face due South. Their old-vine and Premier Cru are aged in mostly old barrels, while their textbook AOC Chablis, is aged exclusively in tanks for 5 to 9 months, before being filtered and bottled on the estate.
100% Chardonnay on limestone sloped soil on both sides of the river “Le Serein”
Traditional vinifcation with temperature control & aged on fine lees to 5 to 8 months in stainless steel.
