The grapes from which this cuvée comes were until recently added to those of another plot of Chassagne Montrachet to form the cuvée old vines. The latter having been newly replanted, this plot of 93 acres on clay-limestone soil is vinified alone. The field practices organic viticulture, and is being certified towards biodynamics. In the cellar, the choice is made according to a traditional method: Black pinots are completely cinned and then slowly ferment thanks to native yeasts. After pressing, the wine is in barrels for an aging of about 18 months, more and more in half-muids, for more finesse and depth. This red chassagne offers a very pure bouquet of black cherry, blackcurrant, rose and spices. Rich, well-structured, it lengthens in a salty finish, bringing a wind of freshness.
