From grapes grown entirely under the organic conversion regime in the single-parcel vineyard of Contrada San Paterniano, plot 140 sheet 17 of the Serra de' Conti of 1.38 hectares. Fertilization is done with the practice of green manure and the soil is managed with permanent natural grassing.
Manual harvesting, destemming and soft pressing, use only of free-run must, clarification by decantation of the must and spontaneous fermentation with pied de cuve selected from the same vineyard. No use of sulphites during fermentation and aging until shortly before bottling.
Aging on the fine lees in steel for 6 months and subsequently for 6 months in the bottle.
